Wheelhouse Sauteed Sea Scallops

Richard's Famous Original Garlic Salt or Firecracker Garlic Salt
Scallops are a sweet and delectable seafood treat. Quickly sauteed until caramelized in butter and olive oil, these mildly spicy scallops are easy to prepare. Make sure your scallops are nice and fresh!
Ingredients
1 lb. fresh sea scallops
1 T. olive oil
1 T. butter
1 tsp. Richard’s Famous Richard’s Famous Cap’n Jeff’s Wheelhouse Seafood Seasoning
1/4 tsp. Richard's Famous Original Garlic Salt or Firecracker Garlic Salt
Directions
Rinse scallops and pat dry thoroughly on paper towels.
Mix together the Cap’n Jeff’s Wheelhouse Seafood Seasoning and Richard's Famous Original Garlic Salt (or Firecracker Garlic Salt if you want more heat).
Sprinkle tops of scallops with 1/3 of the salt and seasoning mixture. Our seasonings are salt-free, so you control the ratio of salt to spice.
Add olive oil and butter to a heavy skillet. Turn heat to medium.
When the butter is slightly bubbling, add scallops, seasoning side up, and raise the heat slightly.
Allow scallops to cook approximately 3 minutes on that side. You can slightly loosen them from the bottom of the pan as they cook if they stick a bit, but don’t move them around. Check the bottom of the scallops. When nicely browned and carmelized (as pictured), turn over, sprinkle with 1/3 of the salt/seasoning mixture and cook for about 2 minutes more, or until just cooked through. Do not overcook or they will become rubbery.
Remove to a serving platter and sprinkle with remaining salt/seasoning mixture. Use additional seasoning, if desired for even more spice and heat. Serve immediately.
