By the Bayou Cajun Dipping Sauce
Try this spicy, creamy dip with crab cakes, chicken tenders, fried pickles, burgers. French Fries, chips, or veggies. Control the amount of heat by adding more or less Richard’s Famous By the Bayou Cajun Seasoning. You can also add more heat by using our handcrafted Firecracker Garlic Salt in place of our Original Garlic Salt.
INGREDIENTS
1/2 C. mayonnaise
1/2 C. light sour cream
2 tsp. Richard’s Famous By the Bayou Cajun Seasoning (or to taste)
1/2 tsp lemon juice
1 tsp. horseradish
1/2 tsp. Worcestershire sauce
1/2 tsp. (or to taste) Richard’s Famous Firecracker (for extra heat) or Original Garlic Salt
In a bowl, mix all ingredients. Chill at least 1/2 hour before serving.
Richard's Famous Winter Waldorf Salad with Lemon Honey Dressing
INGREDIENTS
DRESSING
3 T. Mayonnaise (we use the kind made with olive oil)
2 T. fresh lemon juice
3 T. honey
1/2 tsp. Richard’s Famous Garlic Salt, or to taste
SALAD
Mixed Greens, washed, spun or patted dry, enough to serve four
2 Granny Smith Apples, cored, cut in bite-size pieces
2 T. chopped Walnuts, if desired
2 T. Dried sweetened cranberries
Packed with nutrients, this winter salad has the most delicious creamy dressing!
Fill a large salad bowl with mixed super greens and romaine lettuce torn in bite-size pieces. Add dried sweetened cranberries ; 2 Granny Smith apples, cored, cut into bite-size pieces; and 2 T. of chopped walnuts (if desired). In a small bowl whisk together dressing ingredients. Pour dressing over salad and toss. Serve immediately and watch it disappear! Serves 4.
Virginia's Amazing Caesar Salad
This recipe comes from Richard's wife, Virginia, who is always asked for the recipe. It is bright, lemony, and does not have the heavy garlic taste that some Caesar dressings have. For dinners with family and friends, Virginia is often asked to bring her special Caesar salad.
DRESSING INGREDIENTS
2 T. red wine vinegar
1 T. fresh lemon juice
3 T. mayonnaise
1/2 tsp. Richard's Famous Garlic Salt (or to taste)
1 tsp. Anchovy Paste, if desired
3 T. Extra Virgin Olive Oil
2 T. Grated Parmesan Cheese
2-3 tsp. freshly grated lemon zest (if desired)
SALAD
Romaine Lettuce
Croutons
Shaved Parmesan Cheese for garnish
For the dressing: In a small bowl, whisk together 2 T. red wine vinegar, 1 T. fresh lemon juice, 3 T. mayonnaise, and 1/2 tsp. Richard's Famous Garlic Salt. While whisking, slowly drizzle in 3 T. of Extra Virgin Olive Oil until thick and creamy. Stir in 2-3 tsp. freshly grated lemon zest and 2 T. grated parmesan cheese. This makes about 4 servings. You can add a spoonful of anchovy paste, if desired.
Place washed & dried bite-size pieces of crisp Romaine lettuce in a large salad bowl. Pour dressing over the top and toss. Add croutons (recipe above) and shaved Parmesan cheese, if desired, toss lightly, and serve immediately on cold plates. We place our salad plates in the freezer for a few minutes to get them nice and cold. Serves 4-6.
Richard's Famous Authentic Tossed Italian Salad Dressing
This is our traditional family way of preparing tossed salad. It is indescribably good and super easy!
DRESSING INGREDIENTS
Richard’s Famous Garlic Salt
Extra Virgin Olive Oil
Vinegar: Red Wine, Balsamic, or Apple Cider
PROCEDURE:
In a large salad bowl, place your choices of mixed greens and salad vegetables, such as Romaine and Iceberg lettuce, Arugula, baby Kale, baby Spinach, sliced cucumbers, shredded carrots, sliced celery, tomatoes, sliced sweet peppers, red onions.
Using a spoon, place a small amount of Richard’s Famous Garlic Salt in the palm of your hand. Depending on the size of the salad, this could be between 1/2-1 teaspoon ( one serving size is 1/4 tsp). Using the fingers of your other hand, pinch up a small amount of the garlic salt and lightly sprinkle across the top of the salad; repeat until gone. Drizzle olive oil over the salad (about 1 T. per person). Then lightly drizzle red wine vinegar or balsamic vinegar over the salad (about 1 T. per person). Toss well. For a creamy Italian dressing, simply add 1 T. of mayonnaise to the greens and further toss. For a Greek style dressing, add 1 tsp. Oregano, 1 tsp. dried parsley, and 1 tsp dried basil.
Richard's Famous French Dressing Vinegairette
Shake to following ingredients together:
1/2 C. extra virgin olive oil
1/4 C. vinegar (we use organic apple cider vinegar)
1/2 tsp. Richard's Famous Garlic Salt
1/2 tsp. Paprika
1 tsp. real maple syrup
Serve immediately: pour over your salad greens and toss. Enjoy! Serves 4-6.
Jeff's Special Cucumber and Tomato Salad
Folks at our fairs love sampling this crunchy, juicy salad bursting with summertime flavor.
INGREDIENTS
Ripe tomatoes, cut in bite size pieces
Cucumbers, peeled and sliced thin
Red Onion, peeled and sliced very thin
1-2 T. Extra Virgin Olive Oil
1-2 T. Red Wine Vinegar or Apple Cider Vinegar
1/2 tsp. Richard’s Famous Garlic Salt, or to taste
In a bowl put fresh tomatoes, cut in bite-size pieces. Add peeled, thinly-sliced cucumbers and very thinly-sliced red onion. Sprinkle about 1/2 tsp. of Richard’s Famous Garlic Salt over the top. Drizzle a little extra virgin olive oil over the salad, about 1-2 T. Then drizzle red wine vinegar over the salad, about 1-2 T. Sprinkle lightly with dried dill, if desired. Toss well. This salad can be served immediately, or it can marinate in the fridge for a few hours and be served cold.
Richard's Famous Creamy Traditional Potato Salad
Our potato salad dressing is loaded with flavor, with some ingredients that lighten up traditional potato salad dressing.
INGREDIENTS
For the Dressing:
1 C. mayonnaise (we use olive oil style)
1/2 C. Greek yogurt
2 T. apple cider vinegar
1/2 tsp. Richard's Famous Garlic Salt (Original), or to taste
1 tsp sugar
1 T. sweet pickle relish
1 tsp. Dijon Mustard
1/4-1/2 tsp. Richard’s Famous Hey Dude Ranch Seasoning
4-6 Large Potatoes, peeled, cut in cubes, boiled until just tender, drained. (Or use red potatoes, scrubbed, unpeeled)
PROCEDURE
Whisk together the dressing Ingredients. Refrigerate dressing. Refrigerate cooked potatoes until cold. Pour cold dressing over cold potatoes, stir. You can add any of the following to your potato salad: diced celery, diced cucumber, sliced hard-boiled egg, diced fresh parsley. If you want some spicy heat on your salad, cut the amount of Richard's Famous Garlic Salt by half and use other half Richard's Famous Firecracker Garlic Salt to the dressing. Lightly sprinkle Richard's Famous Firecracker Garlic Salt on top of the serving of salad to taste for more heat, if desired.
Julie's Quinoa Salad
Make a fresh, cold summer salad with cooked quinoa, tomatoes, cucumbers, avocado, red onions (optional) and chopped fresh basil leaves or arugula.
Place a small amount of Richard’s Famous Garlic Salt in the palm of your hand. Depending on the size of the salad, this could be between 1/4 teaspoon for one serving to 1 teaspoon for 4 servings (1/4 tsp. per person is serving size). Richard's Famous Spinach, Mango & Grape Salad with Maple Poppyseed Dressing
Want an amazingly delicious, juicy, and nourishing salad? This is it! In your salad bowl put: organic baby lettuce, fresh arugula, chopped fresh mango, seedless black grapes (or any color), diced cucumber, diced celery, thinly sliced red onion, fresh raspberries.
In a shaker jar mix the Maple Poppyseed Dressing:
1/2 C. olive oil
1/4 C. organic Apple Cider Vinegar
1/2 tsp. Richard's Famous Garlic Salt (or to taste, serving size is 1/4 tsp. per person)
1/2 tsp. dry mustard
1 Tablespoon real maple syrup
1 Tablespoon poppyseeds.
Shake well and pour over salad. Toss. Serves 4. You can add a protein to your salad, such as 2-4 ounces of diced chicken per person, as desired, to make it a meal. Spinach is a superfood packed with nutrients with very few calories. Mango has antioxidant compounds. Serves 4.
Richard's Famous Heirloom Tomato, Basil and Mozzarella Salad
Juicy heirloom tomatoes are arranged on a plate with chopped basil, torn pieces of spring greens, and slices of fresh mozzarella cheese. In a bowl whisk together: 1/4 C. Extra virgin olive oil, 2 T. red wine vinegar, 1/2 tsp. Richard's Famous Garlic Salt (to taste), 1 tsp. Dijon mustard, 1 tsp. raw honey. Drizzle dressing over the salad and serve. Serves 4.
Jeff's Favorite Cole Slaw
Perfect as a side dish for broiled or baked seafood, this quick and easy coleslaw is crunchy, creamy and refreshing.
Purchase a bag of shredded coleslaw mix of green cabbage, red cabbage, and shredded carrots (or shred your own). Place in a large mixing bowl.
In a smaller bowl, whisk together until smooth:
1/4 C. mayonnaise
1/4 C. fat-free sour cream
1/4 C. organic apple cider vinegar
1/4 C. real maple syrup
1 tsp. celery seed
1/8 tsp. Richard's Famous Garlic Salt
Pour over shredded coleslaw and mix thoroughly. Refrigerate for one hour before serving so that the cabbage can absorb the dressing.
Spring Salad
Toss mixed greens, feta cheese, dried cranberries, blueberries, thinkly sliced onions with dressing:
Whisk together ½ C. olive oil, ¼ C. balsamic vinegar, 1/2 tsp. Richard's Famous Garlic Salt, 2 tsp. honey.
Serves 4-8.
