Richard’s Famous Baked Stuffed Shrimp

Baked stuffed shrimp takes a bit of prep time if you buy shrimp with shells on, but it bakes in only 10 minutes! It’s a real treat! The stuffing is a bit spicy, and can be made spicier by adding Richard’s Famous Firecracker Garlic Salt.
Ingredients
about 24 extra large shrimp, uncooked, shelled and deveined
2 T. olive oil
2 T. butter
2 C. cracker crumbs
2 T. lemon juice
2 tsp. Richard’s Famous Richard’s Famous Cap’n Jeff’s Wheelhouse Seafood Seasoning
1/2 tsp. Richard's Famous Original Garlic Salt or Firecracker Garlic Salt
¼ to ½ C. no sodium, no MSG chicken broth (or water)
Directions
Preheat oven to 350 degrees.
Follow directions for shelling and de-veining shrimp if purchased with shells.
Butterfly shrimp (slice down the middle of the underside stopping at tail shell) and spread flat on a baking sheet sprayed with cooking spray.
In a saucepan, melt butter with olive oil. Stir in crumbs, lemon juice, seasoning, and garlic salt until combined. Gradually add liquid until the stuffing just holds together without being too wet. Top each shrimp with a spoonful of stuffing.
Bake for about 9 minutes. Shrimp will be pink. Place under broiler for 1 minute to crisp the top of the stuffing.
Drizzle a bit of melted butter and/or lemon juice over shrimp before serving. Sprinkle lightly with moreRichard’s Famous Richard’s Famous Cap’n Jeff’s Wheelhouse Seafood Seasoning if desired.
