Cap’n Jeff’s Baked Stuffed Lobster

What is more decadent and succulent than baked stuffed lobster?
Our garlic salt and seafood seasoning make it incredibly delicious.
This recipe uses cooked whole lobsters from your local fish market or supermarket. Then just make the stuffing and your preparation is less time-consuming.
Or boil the lobsters yourself according to your favorite recipe.
Ingredients
2 two-pound whole boiled lobsters (we purchase cooked from the store)
2 T. olive oil
1 lb. fresh scallops (or use shelled cooked shrimp, deveined, chopped; or use cooked crabmeat, chopped)
1 stick butter, melted
1 C. crackers crumbs (we use Ritz)
1 C. Panko breadcrumbs
2 T. grated Paremsan cheese
1 T. lemon juice
1 T. Richard’s Famous Richard’s Famous Cap’n Jeff’s Wheelhouse Seafood Seasoning (divided in half)
½ tsp. Richard's Famous Original Garlic Salt or Salty Sea Garlic Salt
Directions
Preheat oven to 375 degrees.
Prepare the lobsters:
Lay the cooked lobsters, when cool enough to handle, on their backs on a cutting board. With a sharp knife or heavy scissors, cut from head to tail being careful not to cut through the bottom shell or through the tail fins.
Carefully spread the body until it lies flat open and scoop out the pink roe and green tomalley (we discard these). Remove any gray spongy tissue. Remove the sac from the head.
Remove the tail meat and de-vein (sometimes the vein is clear, sometimes black). Place the tail meat back in the tail shell.
Leave the claws intact.
Place the lobsters on a baking sheet.
Prepare the stuffing:
Saute the scallops in olive oil over medium-high heat for about 3 minutes per side, until carmelized and just cooked through. Cut each scallop into quarters. Set aside.
In a saucepan, melt 1 stick of butter, add cracker crumbs, bread crumbs, grated Paremsan cheese, lemon juice
½ T. Richard’s Famous Richard’s Famous Cap’n Jeff’s Wheelhouse Seafood Seasoning , ½ tsp. Richard's Famous Original Garlic Salt or Salty Sea Garlic Salt, and cooked scallops (or other cooked shellfish of your choice as noted in recipe).
Mix until well-combined.
Assemble and Bake:
Fill the lobster shell cavity with the stuffing and place some over the tail meat as well. Lightly sprinkle with the remaining ½ T. Richard’s Famous Richard’s Famous Cap’n Jeff’s Wheelhouse Seafood Seasoning.
Place baking sheet in oven. Bake until heated through, about 15 minutes.
Turn on broiler and broil for 1-2 minutes until the stuffing is lightly browned and slightly crispy on top.
Serve with melted butter and lemon wedges if desired.
