Ancho Fiesta Grilled Street Corn

This recipe uses:

Richard’s Famous Ancho Fiesta Southwest Seasoning

Richard’s Famous Original Garlic Salt (to taste) – OR –
Richard’s Famous Firecracker Garlic Salt (to taste) for more heat

Oh my goodness. The grilled corn is amazing. If you usually eat one ear of corn on the cob, you might want to grill two.

Ingredients
> olive oil
> 6 ears of corn o the cob, shucked and cleaned
> 1/2 Cup grated Cotija cheese (if not available, you can substitute crumbled Feta cheese) and extra for topping
> 1/4 C. mayonnaise  
> 1/4 C. low fat sour cream
> 1/8 tsp. Richard’s Famous Original Garlic Salt (or to taste) – OR –
1/8 tsp. Richard’s Famous Firecracker Garlic Salt (or to taste) for more heat
> 1/2 tsp. Richard’s Famous Ancho Fiesta Southwest Seasoning
Lime wedges

Directions
Preheat your grill to medium high.

Mix together the cheese, mayonnaise, sour cream and Richard’s Famous Ancho Fiesta Southwest Seasoning. Keep refrigerated.

Lightly brush cleaned corn with olive oil.
Place corn on hot grill and turn often until the corn is lightly charred on all sides. The light charring will indicate that the corn is done— about 10 minutes.

Spoon the mayonnaise mixture on a plate. Roll each hot ear of corn in the mixture. Sprinkle with extra cheese and a bit of garlic salt, if desired. Serve immediately with lime wedges.
