Ancho Fiesta Black Bean Tacos
This recipe uses:
Richard’s Famous Original Garlic Salt– OR – Original Richard’s Famous Firecracker Garlic Salt for more heat
Richard’s Famous Ancho Fiesta Southwest Seasoning
Quick Black Bean Tacos
2 cans of low sodium black beans, drained and rinsed
1 cup cooked quinoa (instead of cooking quinoa in advance, you can use ready-to-serve quinoa, sold in individual cups that are microwave-ready. Find them on the rice aisle).
½ C. prepared salsa
1 T. Richard’s Famous Ancho Fiesta Southwest Seasoning
¼ - ½ Cup of water
½ tsp. Richard’s Famous Original Garlic Salt– OR – Richard’s Famous Firecracker Garlic Salt for more heat
Spray a skillet with cooking spray.
Combine the beans, cooked quinoa, and salsa in the pan. Stir and warm up over medium heat.
Add the Southwest Seasoning and Garlic Salt. Stir well.
Cook until hot, about 5 minutes, stirring occasionally. Add water to keep the mixture from sticking to the pan, and to create a saucier mix, as desired. Add more salt or seasoning mix to taste.
Serve on soft or crunchy taco shells with avocado, diced tomato, salsa, sour cream, shredded cheddar cheese, and/or shredded lettuce, if desired.
Serve with tortilla chips and salsa if desired.
